At the conference, leading scientists will present scientific results which may help to refocus food science and technology and to use results from new sciences and other fields such as material science in order to improve nutritive value and the eating quality of processed foods.

Topics include: Functional and specialized carbohydrates, pre- and probiotics, new lipids: structure and function, enzymes and bioactive peptides, new use for “old” proteins, antioxidants – food protection and health, flavour and nutrients – controlled release, future foods for extreme conditions, the challenge of convenience and freshness, traceability and risk assessment.
