Lima, Peru has been declared a UNESCO World Heritage Center due to the large number of artistic monuments found there. The Cathedral Basilica, built in 1625, is a jewel of Spanish colonial art, as is the Church of San Francisco, where catacombs discovered in 1951 are open to the public. There is never a shortage of celebrations in Peru; the nation enjoys over 3000 festivals each year. Homages to patron saints have blended with magical beliefs of ancient forms of worship from the cultures of pre-Hispanic times. The radiant colors of Peru’s festivals combine music, costumes, and a theatrical concept aimed at recreating history. Peru is also home to 84 of the 104 ecosystems that exist on earth. This combination of cultural and geographic diversity has produced unique mix of languages, architecture, arts and crafts, and also a spectacular assortment of local foods. Ceviche, raw fish marinated in lemon juice and seasoned with chili, is the most representative of all Peruvian seafood dishes. Other tasty temptations include arroz con pato, duck cooked with rice, and deserts such as picarones, deep fried pumpkin and sweet potato doughnuts dipped in sugar cane syrup. At night, make your way to Barranco's, San Isidro, or Miraflores where there are a great variety of casinos, discos, bars, and pubs. Make sure to check out Peñas Criollas, live Afro-Peruvian music and dancing, where the party is in the rhythm of the guitar and the cajón, traditional percussion box. The beaches of Paracas and along the north coast are ideal for surfing, windsurfing, fishing, and scuba diving.
