The International Congress of Meat Science and Technology (ICoMST) is the annual forum for the international exchange of new scientific ideas in meat science. The aim of ICoMST is to enhance the co-operation and exchange of information between academic researchers and industry researchers in the field of meat science and technology.

The meetings focus on the latest findings in specific areas, critical reviews of work in relevant fields as well as updating attendees on current issues to be addressed. The organising body for the annual congress is the group of National Contact Persons. This is a truly global body with representation from all major meat producing countries. Attendance at the conference reflects this, with attendees from up to 50 different nations. Researchers with different levels of scientific experience have the opportunity to meet and exchange ideas. Students and young researchers are particularly encouraged to attend.

Oral presentations will be given by leading meat scientists and topics to be discussed will include meat and health, quality traits, animal welfare and handling, innovation in packaging, meat technology / product innovation, responding to consumer needs and meat safety. There will also be a dedicated industry session and a workshop covering other special hot topics.

The six-day conference also includes a full social programme with delegates visiting Dublin and its surroundings. Many will take the opportunity to travel around Ireland before and after the conference. The Wednesday of the congress is dedicated to technical and scenic tours with delegates visiting meat plants, research centres and local tourist attractions.
