INTRODUCTION

The International Conference on Food Science and Nutrition 2012 (ICFSN) with the theme “Traditional Resources: Scientific Approaches Towards Quality Foods” will serve as a valuable forum for international experts to share and discuss the latest research findings, research and market trends, and new insights into the scientific knowledge and practical know-how on a wide range of emerging topics in the field. The conference will provide opportunities for food scientists/technologists, nutritionists, dietitians, researchers, academia, food standards and legislation officials, enforcement agencies, food industry and food service establishments to present and exchange ideas and experiences as well as strengthen networking. The conference features a series of presentations and discussion comprising of plenary lectures and oral and poster presentations.

This international conference is jointly organized by Universiti Malaysia Sabah, the Malaysian Institute of Food Technology (MIFT) and the International Union of Food Science and Technology (IUFoST).
